Paul Moser Winemaker ImageWhat’s your favorite C&B wine? That’s very difficult. Dr. Spock says you should never exhibit favoritism towards children.

Best music to drink wine by? That depends on the wine. For me, very frequently I’ll drink wine with Beethoven’s Late Quartets. They’re really wonderful—they’re not symphonic, it’s not a lot of noise. The music doesn’t call too much attention to itself, yet it has its own kind of originality.

What’s wine country’s best-kept secret? There are no secrets here. It’s too small a community.

What’s your favorite aroma in wine? Well, there are the five flavors—sweet, sour, salt, bitter and umami. I think it is possible to smell umami. It gives a richness, a dimension to the wine. It is a real thing, and I think you can actually smell it in wine. It’s lush, and it crosses all borders: white wine, red wine, even in rosé. Without that amplitude—you might taste the fruit, the alcohol, the acidity—and it might be good. But it’s two-dimensional. With umami you get the depth and dimension.

If you had a super power, what would it be? I wouldn’t want the responsibility. It’s hard enough just to be a regular guy.
